Yummy South Indian Curry

Just 3 Main Ingredients - An authentic South Indian curry

Serves 3-4 | Cook Time: 30 Minutes

Ingredients

  • 3 tbsp oil
  • 2 large onions, thinly sliced
  • 3-4 tbsp Little Elephant spice mix
  • 500g chicken pieces
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a pan and fry the onions for 10 minutes until golden brown.
  2. Add little elephants spice mix and stir for 2 minutes on low heat.
  3. Add the chicken and cook for 10 minutes, stirring regularly.
  4. Add 2-3 cups of water and salt to taste, cover, and simmer until the chicken is thoroughly cooked.
  5. Garnish with fresh coriander and serve pipeing hot with rice or fresh naan / bread.

Creamy Paneer Curry (Or Tofu)

A creamy vegetarian curry to impress. Can be made with Paneer, or Tofu for a vegan option.

Serves 3 | Cook Time: 20 Minutes

Ingredients

  • 3 tbsp oil
  • 2 medium tomatoes (chopped) or 1 cup tomato puree
  • 2–3 tbsp Little Elephant spice mix
  • 300g paneer, cut into cubes. Or 300g Tofu
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a pan, add the tomatoes or tomato puree, and fry on low heat for 5 minutes.
  2. Add little elephants spice mix, stir well, and cook for 5 minutes on low heat
  3. Add the paneer cubes or the tofu and cook for at least 5 minutes, stirring gently.
  4. Add 2 cups of water, add salt to taste, simmer until the curry thickens.
  5. Garnish with fresh coriander and serve hot with rice or fresh naan / bread.

Oven Magic

Serves 2 | Cook Time: 30 Minutes

Ingredients

  • 3 tbsp oil
  • 3 tbsp Little Elephant spice mix
  • 1 tbsp lemon juice
  • 2 chicken legs or thighs

Instructions

  1. Mix the oil, spice mix, and lemon juice in a bowl.
  2. Rub the mixture all over the chicken pieces, ensuring they’re well coated.
  3. Place the chicken on a baking tray and cook for around 30 minutes at 200°C, turning halfway for even cooking. Ensure chicken is cooked through.
  4. Serve pipeing hot with beer or fresh breads.
